Pour a tablespoon of olive oil into a frying pan. Place the spinach in the pan and wilt it down.
Once wilted, tip the spinach into a colander over the sink. Take the water out of the spinach by using a spoon and pressing the water through the colander. You’ve got to get the water out, as that’s the bitterness.
Once drained, take the spinach and pour into a serving bowl. Add the white sauce and a teaspoon of creamy horseradish. Again it is your choice how strong you want it. If you can get fresh, fresh is good. It’s ready to serve.
