Lemon Cod in a buttery sauce

Ingredients
- 1 sachet of Knorr Gourmet Lemon Cod
- 4 cod fillets
- 200g courgettes cut into thin slices
- 1 lemon cut into 4 thin slices (optional)
- 50ml single cream
- 150ml water
- Potatoes
Method
- Pre-heat oven to Gas Mark 7 for gas oven, 200°C for fan oven and 200°C for conventional oven.
- Lay foil pouch flat on a baking tray so opening is facing you and insert fresh ingredients, placing the fish on top of the vegetables.
- Blend the seasoning mix with cream and water, mix until smooth and pour over ingredients in pouch. Fold over the open foil edge twice (approx 2cm) to close the pouch.
- Place tray in oven and cook for 25–30 minutes in a gas oven (middle shelf), 25–30 minutes in a fan oven (middle shelf) and 20–25 minutes in a conventional oven (2nd from top shelf).
- Ensure there is enough room for foil to expand. Carefully cut open the bag (attention: hot steam); check fish is fully cooked before serving.
- Serve with creamy mashed potato.
