Waldorf Salad

Ingredients
- 125ml Hellmann’s Mayonnaise or Hellmann’s Light Mayonnaise
- 2tsps Knorr Touch of Taste Chicken
- Juice of 1 lemon
- 2tbsps water
- 2–3 celery stalks
- 4tbsps chopped walnuts
- 2 Granny Smith apples, peeled
- 2 chicken breasts (from a roast chicken) or smoked chicken or smoked turkey
- Parsley sprigs
Method
- First make the dressing. Whisk together the mayonnaise with half the lemon juice. Add the water and whisk it in to thin it slightly.
- Add a dash of Touch of Taste Chicken to the dressing and mix it in well. This gives a lovely roast chicken flavour to the dressing.
- Chop the celery finely, reserving the celery leaves. I’ve chosen to chop it into matchsticks but chop it as you want. Chop the celery leaves and apples finely.
- Mix together the celery, apple and celery leaves. Add remaining lemon juice and toss together to prevent the apple discolouring.
- Add in the mayonnaise dressing and toss it to mix thoroughly.
- Sprinkle half of the chopped walnuts over the base of a serving dish. Top with the Waldorf salad mixture.
- Finely slice the roast chicken breasts, cutting them with the grain.
- Arrange the sliced chicken on top of Waldorf salad. Sprinkle over the remaining chopped walnuts. Garnish with parsley sprigs and serve at once.
