Sun ripened tomato with crème fraiche

The tomatoes that form this delicious soup have been ripened in the sunlight to coax out the natural sugars and full flavour. Teamed with delicately sharp crème fraiche, aromatic thyme and fruity olive oil, the result is exquisite.

PREPARATION

  1. Bring 560ml of water to the boil.
  2. Empty the contents of the sachet into the boiling water. Stir well with a whisk or fork.
  3. Reduce heat and simmer for 5 minutes, stirring occasionally.
