Act to save leftover fruit


If your fresh fruit is in danger of going off, act to save it. Remember that the freezer is the thrifty cook’s best friend…

  1. Freeze: Transform fruit into juices or cooked purées, which can then be frozen for later use.
  2. Smoothies: Juice citrus fruits like oranges, clementines and satsumas and either drink the juice at once or pour it into a freezerproof container and freeze it for future use, either on its own or in a smoothie. Bananas freeze really well and can be used in smoothies.
  3. Cakes and ice cream: Remember that even if your bananas have turned really black, really ripe bananas are brilliant in banana cake or to make banana ice cream.
  4. Crumbles and puddings: An excess of fruit, such as apples, pears or plums, can be gently stewed with a little sugar, cooled and frozen for future use in fruit crumbles.
