Act to save leftover fruit
If your fresh fruit is in danger of going off, act to save it. Remember that the freezer is the thrifty cook’s best friend…
- Freeze: Transform fruit into juices or cooked purées, which can then be frozen for later use.
- Smoothies: Juice citrus fruits like oranges, clementines and satsumas and either drink the juice at once or pour it into a freezerproof container and freeze it for future use, either on its own or in a smoothie. Bananas freeze really well and can be used in smoothies.
- Cakes and ice cream: Remember that even if your bananas have turned really black, really ripe bananas are brilliant in banana cake or to make banana ice cream.
- Crumbles and puddings: An excess of fruit, such as apples, pears or plums, can be gently stewed with a little sugar, cooled and frozen for future use in fruit crumbles.
