The pack is just a guide – I like mine 'al dente'


I like my pasta cooked ‘al dente’ in the true sense of the word, meaning with some bite. Serve an Italian person pasta that’s been cooked according to the pack instructions and they’ll tell you it’s overcooked. The packet is just a guideline, so never be dictated by it. Everybody has their own definition. Usually, if the pack says 12 minutes, I’ll cook it for nine. Having said that, I am half-Italian, so I really like my pasta firm. Here’s my way of achieving perfect pasta every time.
