The potatoes really absorb the flavour of the butter
Most people simply put a pat of butter on their boiled potatoes and serve them like that. My way of making buttered potatoes takes a little longer, but tastes much better.
To start with I prefer my potatoes peeled. New potatoes or Jersey Royals, when they’re in season, are particularly good served this way. Boil or steam your potatoes until tender, then place the hot, freshly cooked potatoes in a bowl with diced butter. Sprinkle over herbs, such as mint leaves or chopped chives or parsley, cover with cling film and set them aside in a warm place for 20 minutes. This gives the potatoes a chance to soak up the butter and absorb the flavour of the herbs. It’s the best way to make buttered potatoes. They’re delicious with fish, such as Grilled Tuna Steaks à la Nicoise or Mackerel with Salsa Verde. In fact, they’re delicious full stop.
